Peanut Porridge

Ingredients

2 cups raw peanuts

1 green plantain, chopped

4 cups coconut milk

1 cup condensed milk

2 cups evaporated milk

½ teaspoon salt

2 cinnamon sticks or leaves

½ teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 teaspoon vanilla extract
-
½ teaspoon rosewater or almond extract (optional)

⅓ cup all-purpose flour or Minute Oatmeal
Instructions

In a blender, combine the peanuts, green plantain, 2 cups of coconut milk, 1 cup evaporated milk, salt, cinnamon, nutmeg, vanilla extract, rosewater or almond extract, and flour. Blend until smooth, about 1 minute.

In a medium pot over low-medium heat, add the remaining 2 cups of coconut milk and a cinnamon stick. Bring to a boil.

Gradually whisk in the blended mixture, then cover and let it simmer on low-medium heat for 10–15 minutes.

Remove the cinnamon stick.

Stir in 1 cup evaporated milk and condensed milk (or your preferred sweetener).

Taste and add additional spices if needed.

Simmer on low heat for an additional 5 minutes, then remove from heat and serve warm.
💡 Chef’s Note:
This method creates a smooth porridge. Remember to remove the cinnamon stick before refrigerating. You can freeze any porridge, but for a smooth consistency after thawing, blend it before reheating.
