Ingredients

  • 2 cups hominy corn

  • 2 cups coconut milk

  • 3–5 cups water

  • 1 cup condensed milk

  • 2 cups evaporated milk

  • 1 teaspoon salt

  • 2 cinnamon sticks or leaves

  • ½ teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • 1 teaspoon vanilla extract

  • ½ teaspoon mixed spice essence

  • 2 tablespoons cornstarch or all-purpose flour


Instructions

  1. Rinse the hominy corn thoroughly using a strainer.

  2. In a large bowl, combine 2 cups of water, 1 teaspoon of salt, 1 teaspoon of sugar, and 2 cups of hominy corn. Cover and refrigerate to soak for 24 hours.

  3. Transfer the soaked hominy corn to a medium pot with the soaking water (or replace with 2 cups of fresh water, if preferred). Add a cinnamon stick or leaf and boil over medium heat for 45–60 minutes.

  4. Check the pot frequently and add more hot water as needed.

  5. Once the corn is fully cooked, reduce the heat.

  6. Stir in the coconut milk and let it simmer for another 10–15 minutes.

  7. Add the ground cinnamon, nutmeg, vanilla extract, and mixed spice essence, stirring well.

  8. To thicken the porridge, mix 1 tablespoon of cornstarch with 1 tablespoon of water, then slowly stir it into the pot.

  9. Pour in the condensed milk and evaporated milk, mix thoroughly, and simmer for 2 more minutes.

  10. Remove from heat and serve hot.

💡 Chef’s Note:

For a richer porridge, simmer longer on low heat and adjust sweetness to taste. Garnish with cinnamon or a drizzle of condensed milk for extra indulgence.
