Ingredients:

1 can ackee (drained and rinsed)

½ lb salted boneless codfish

1 onion, julienned

2 tomatoes, diced

2 stalks scallion, minced

1 sprig thyme

1 garlic clove, chopped
-
¼ cup tri-color sweet peppers, julienned (red, green, yellow)

½ scotch bonnet pepper

Salt and pepper to taste

½ teaspoon all-purpose seasoning (optional)

2 tablespoons oil
Instructions:

Rinse the salted cod under cold water to remove excess salt. Place in a small pot with 2 cups of water and bring to a boil.

Remove the cod, rinse thoroughly with cold water, and flake into small pieces.

Heat oil in a medium skillet over medium heat. Sauté the tomatoes, onion, garlic, scallion, scotch bonnet pepper, and sweet peppers for 2–3 minutes.

Add the flaked salted cod, black pepper, and all-purpose seasoning. Stir well and cook for a few more minutes.

Gently fold in the ackee, combining it with the salted cod. Taste and adjust seasoning if needed.

Remove from heat and serve hot.
