Caribbean-Style Vegetable Stir Fry

Bright, colorful, and packed with fresh Caribbean flavor, this Vegetable Stir Fry is the perfect quick and healthy dish for any mealtime. Made with crisp cabbage, sweet peppers, carrots, and aromatic herbs, this stir fry delivers a delicious combination of textures while keeping prep and cook time to a minimum.

Each ingredient brings its own unique flavor — from the sweetness of the peppers and carrots to the subtle bite of garlic and scallions. Lightly seasoned and quickly sautéed, the vegetables stay vibrant and crunchy, making this dish a great side for rice, pasta, or any protein.

Whether you're building a plant-based meal, adding a nutritious side to dinner, or simply looking for a fast and flavorful dish, this Caribbean-style Vegetable Stir Fry is a versatile go-to recipe you'll want to make again and again.


Recipe Details:

  • Servings: 4–6

  • Prep Time: 10 mins

  • Cook Time: 10 mins


Ingredients:

  • 2 tbsp oil

  • 1 medium onion, julienned

  • 1 stalk scallion, diced

  • 2 garlic cloves, minced

  • 2 medium carrots, julienned

  • ½ head cabbage, shredded

  • ½ green sweet pepper, sliced

  • ½ red sweet pepper, sliced

  • 1 tsp vegetable seasoning

  • 2 tbsp water


Instructions:

  1. Wash and drain the vegetables. Julienne the peppers and onion, shred the cabbage and carrots, and chop remaining seasonings. Set aside.

  2. Heat oil in a medium skillet or wok over medium heat.

  3. Add garlic, onion, carrots, and sweet peppers. Sauté for 2–3 minutes.

  4. Stir in cabbage, scallions, salt, pepper, and vegetable seasoning or bouillon.

  5. Add a splash of water to help the vegetables steam.

  6. Reduce heat to low and cook for 4–5 minutes, or until vegetables reach your desired tenderness. Serve and enjoy!


💡 Chef’s Note:

For extra flavor, add a drizzle of soy sauce or a touch of sesame oil just before serving. If you prefer softer vegetables, simply steam for an additional 1–2 minutes.
