Ingredients:

  • 4 lbs chicken (breast, back cuts, thighs)

  • 2 tbsp curry powder

  • 1 tbsp all-purpose seasoning

  • 1 tbsp chicken seasoning

  • 1 tbsp green seasoning

  • 6 scallion stalks, chopped

  • 3 thyme sprigs

  • 1 medium onion, diced

  • 1 tsp grated ginger or ginger paste

  • 4 crushed allspice berries

  • 2 garlic cloves, crushed (or 1 tsp garlic paste)

  • ½ medium sweet pepper, diced

  • 1 large potato, diced (Irish or white sweet potato like Bonita)

  • ¼ cup water

  • 2 tbsp oil

  • Vinegar and lemon (for cleaning the chicken)


Instructions:

  1. Chop all fresh seasonings and set aside.

  2. Clean the chicken with vinegar, lemon, and water, then cut into desired pieces.

  3. Season the chicken with curry powder, all-purpose seasoning, chicken seasoning, green seasoning, scallion, onion, sweet pepper, thyme, garlic, and crushed allspice.

  4. Mix well, cover, and let marinate for at least 30 minutes.

  5. Heat oil in a skillet over medium heat. Remove aromatics from the chicken and add only the chicken pieces to the pot. Cook for 5 minutes.

  6. Add the reserved aromatics, potato, ginger, and water.

  7. Taste and adjust seasoning if needed.

  8. Cover and cook on low–medium heat for 20–25 minutes, or until chicken is cooked through.

  9. If the gravy is thin, mix 1 tbsp flour or cornstarch with 1 tbsp water and stir it into the pot. Simmer 5 minutes to thicken.

  10. Remove from heat and serve hot.

For deeper flavor, toast the curry powder in the oil before adding the chicken. This enhances the color and unlocks richer, more aromatic notes in the gravy.
