Caribbean Curry Chicken is a beloved island classic known for its bold flavors, fragrant aromatics, and rich, vibrant curry gravy. This dish is a staple in many Caribbean homes and is often enjoyed for lunch, dinner, or even weekend gatherings. The chicken is deeply seasoned with curry powder, green seasoning, allspice, thyme, and fresh herbs, creating a delicious blend of savory and earthy notes.

As the curry simmers, the chicken becomes tender while the potatoes help thicken and enrich the sauce, giving it that signature silky texture. Every bite delivers layers of flavor — from the warmth of ginger and garlic to the gentle heat of fresh herbs and spices. Serve it with white rice, rice and peas, or roti for a complete and satisfying meal.

Whether you're recreating a nostalgic island favorite or trying curry chicken for the first time, this recipe brings authentic Caribbean warmth straight to your kitchen. It’s simple, comforting, and packed with flavor — perfect for any day of the week.


Recipe Details:

  • Servings: 4–6

  • Prep Time: 15 mins

  • Cook Time: 35 mins


Ingredients:

  • 4 lbs chicken (breast, back cuts, thighs)

  • 2 tbsp curry powder

  • 1 tbsp all-purpose seasoning

  • 1 tbsp chicken seasoning

  • 1 tbsp green seasoning

  • 6 scallion stalks, chopped

  • 3 thyme sprigs

  • 1 medium onion, diced

  • 1 tsp grated ginger or ginger paste

  • 4 crushed allspice berries

  • 2 garlic cloves, crushed (or 1 tsp garlic paste)

  • ½ medium sweet pepper, diced

  • 1 large potato, diced (Irish or white sweet potato like Bonita)

  • ¼ cup water

  • 2 tbsp oil

  • Vinegar and lemon (for cleaning the chicken)


Instructions:

  1. Chop all fresh seasonings and set aside.

  2. Clean the chicken with vinegar, lemon, and water, then cut into desired pieces.

  3. Season the chicken with curry powder, all-purpose seasoning, chicken seasoning, green seasoning, scallion, onion, sweet pepper, thyme, garlic, and crushed allspice.

  4. Mix well, cover, and let marinate for at least 30 minutes.

  5. Heat oil in a skillet over medium heat. Remove aromatics from the chicken and add only the chicken pieces to the pot. Cook for 5 minutes.

  6. Add the reserved aromatics, potato, ginger, and water.

  7. Taste and adjust seasoning if needed.

  8. Cover and cook on low–medium heat for 20–25 minutes, or until chicken is cooked through.

  9. If the gravy is thin, mix 1 tbsp flour or cornstarch with 1 tbsp water and stir it into the pot. Simmer 5 minutes to thicken.

  10. Remove from heat and serve hot.


💡 Chef’s Note:

For deeper flavor, toast the curry powder in the oil before adding the chicken. This enhances the color and unlocks richer, more aromatic notes in the gravy.
