Ingredients

  • 8 bundles of scallion (32 stalks)

  • 2 large yellow onions

  • 2 oz fresh thyme

  • 20 garlic cloves

  • 1 tablespoon allspice berries

  • 1 teaspoon grated ginger

  • 2 Scotch bonnet peppers

  • 1 green sweet pepper

  • 1 red sweet pepper

  • 2 tablespoons olive oil

  • 1 tablespoon vinegar

  • 1 tablespoon kosher salt

  • 1 tablespoon brown sugar

  • 3–4 (16 oz) Mason jars


Instructions

  1. Wash the scallions and peppers thoroughly, removing roots and stems.

  2. Roughly chop all the ingredients (wear gloves when handling Scotch bonnet peppers).

  3. Combine the ingredients in a blender or food processor.

  4. Blend until the mixture reaches your preferred consistency.

  5. Transfer the seasoning to Mason jars and store it in the refrigerator.

This sauce will stay fresh until it’s finished, as the vinegar acts as a natural preservative.
