Ingredients

1 can callaloo (drained) or 4 cups fresh callaloo

2 tablespoons water

1 medium tomato, diced
-
2 stalks scallion, chopped

1 garlic clove, minced
-
2 sprigs thyme
-
½ medium onion, chopped
-
1 teaspoon all-purpose seasoning

1 tablespoon oil

¼ teaspoon salt

¼ teaspoon black pepper

½ scotch bonnet pepper, chopped

¼ green sweet pepper, julienned

¼ red sweet pepper, julienned
Instructions:

Finely chop all seasonings and set aside.

Heat oil in a medium skillet over medium heat.

Sauté the tomato, scallion, thyme, onion, garlic, scotch bonnet pepper, and sweet peppers for 2–3 minutes.

Add the callaloo, all-purpose seasoning, salt, and pepper.

Pour in the water and let it simmer on low heat for 5–7 minutes. Remove from heat and serve.
