It’s a fast-cooking recipe that delivers big island flavor in just minutes, making it perfect for busy days when you still want something satisfying and delicious.

The steak is lightly seasoned and seared to lock in juices, then finished in a rich, savory sauce made with Worcestershire sauce, sweet chili, wine, and fresh aromatics. Tri-color sweet peppers add color, crunch, and a subtle sweetness that balances the savory depth of the dish.

Ingredients:

Steak:

  • 3 lbs sirloin steak

  • ½ teaspoon browning

  • 1 teaspoon all-purpose seasoning

  • 1 tablespoon green seasoning

  • ½ teaspoon black pepper

  • 2 tablespoons oil

Ingredients to Add to Skillet:

  • 2 garlic cloves, minced

  • ½ teaspoon grated ginger or ginger paste

  • 2 stalks scallion, chopped

  • 1 small onion, julienned

  • ¼ cup tri-color sweet peppers (red, green, yellow), julienned

  • 3 sprigs thyme

  • 4 allspice berries, crushed

  • 1 teaspoon all-purpose seasoning

  • 1 tablespoon green seasoning

  • 1 teaspoon jerk seasoning

  • ½ scotch bonnet pepper

Sauce (mix separately):

  • 2 tablespoons cornstarch

  • 2 tablespoons Worcestershire sauce

  • ¼ cup sweet chili sauce

  • 2 tablespoons red wine

  • ¼ cup water


Instructions:

  1. Chop all seasonings and set aside

  2. Cut steak into strips. If washing, rinse with cold water and lime, then pat dry.

  3. In a large bowl, season the steak with all-purpose seasoning, jerk seasoning, and black pepper. Mix well to coat evenly.

  4. Heat oil in a large skillet over medium-high heat.

  5. Brown the steak for 4–5 minutes, then remove from the skillet and set aside.

  6. In the same skillet, add garlic, ginger, scallion, and onion. Sauté for 2 minutes.

  7. Add green seasoning, jerk seasoning, thyme, allspice berries, and all-purpose seasoning. Stir to combine.

  8. In a small bowl, mix cornstarch, Worcestershire sauce, sweet chili sauce, wine, and water until smooth.

  9. Pour the sauce into the skillet and simmer for 2–3 minutes, stirring until slightly thickened. Taste and adjust seasoning if needed.

  10. Return the steak to the skillet. Add the tri-color sweet peppers, gently stir, cover, and simmer on low heat for 3–5 minutes.

  11. Remove from heat and serve with your favorite side.

For extra tenderness, slice the steak against the grain and avoid overcooking—it should finish cooking gently in the sauce. If you prefer a richer gravy, let the sauce simmer uncovered for an extra minute before adding the steak back. Adjust the scotch bonnet to your heat preference or leave it whole for flavor without extra spice.
