The shrimp are lightly marinated with fresh aromatics and seasonings, then quickly cooked to lock in juiciness while absorbing the spicy, savory sauce. Paprika or annatto adds a rich red hue, giving the dish its signature vibrant color.

Ingredients:

  • 2 lbs whole shrimp (preferably with heads on)

  • 2 Scotch bonnet peppers, diced

  • 1 medium onion, diced

  • 1 garlic clove, minced

  • 2 scallion stalks, diced

  • 1 sprig thyme (leaves removed)

  • ½ teaspoon salt

  • 1 teaspoon paprika or annatto (for color)

  • 1 teaspoon all-purpose seasoning

  • 1 teaspoon seafood seasoning

  • ½ cup water

  • A few drops of red food coloring

  • Lemon wedges (for garnish)


Instructions:

  • Chop all seasonings and set aside.

  • Clean and wash shrimp with lime or lemon and water. Pat dry.

  • In a large bowl, season shrimp with Scotch bonnet pepper, onion, garlic, thyme, scallion, paprika or annatto, salt, seafood seasoning, and all-purpose seasoning.

  • Mix well and allow shrimp to marinate for 30 minutes.

  • Heat oil in a medium skillet over medium-high heat.

  • Add shrimp along with the seasoning mixture and stir for 3–4 minutes.

  • Mix water with a few drops of red food coloring and pour into the skillet.

  • Cover and simmer on low heat for 4–5 minutes until shrimp are fully cooked.

  • Remove from heat, garnish with lemon wedges, and serve hot.

For extra flavor, keep the shrimp heads on—they add richness to the sauce. Adjust the amount of Scotch bonnet peppers based on your heat tolerance, and always handle them with care.
