Jamaican Brown Stew Fish


  • 4lbs Whole Fish or Sliced Fish (Scaled and cleaned)
  • 1 Tablespoon Fish Seasoning(I'm using Maggi)
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Scotch Bonnet Pepper
  • 2 Pieces of Scallion
  • Vegetable Oil For Frying
  • Vinegar
  • Lemon

Brown Stew Sauce:

  • 1 Small Onion(Julienned)
  • 1 Tomato (Chopped)
  • 1/2 Green and Red Sweet Pepper(Cut in strips)
  • 4 Pieces of Scallion(Chopped )
  • 4 Pieces of Garlic(Crushed)
  • 1 Large carrot(Peeled & Cut in Strips)
  • Okra(Optional)   
  • 4 Sprigs Fresh Thyme
  • Scotch Bonnet(Slice or Leave Whole)
  • 1 Small Piece Of Ginger(Finely Crushed)
  • 6-8 Pimento Seeds(Crush)
  • 1 Cup Wine(I'm using Stone's Ginger Wine) or Water
  • 1 Tablespoon Green Seasoning(Coarsely blended onion, garlic, scallion, thyme, scotch bonnet, ginger) 
  • 1 Teaspoon Jerk Seasoning(Home Made or Store Bought)
  • 1/2 Cup Ketchup
  • 1 Tablespoon Sweet Chili Sauce(Optional, Red Hot Brand)
  • 1 Tablespoon Vinegar
  • 1 Teaspoon Soy Sauce or Browning
  • 1 Tablespoon Oil(I'm using Coconut Oil)


  1. Completely scale and clean fish. In a large bowl, wash with vinegar, lemon and water. Pat dry with paper towel.
  2. In a small bowl, combine, Fish Seasoning, Salt and Pepper. Evenly spreading over fish. Be sure to add seasoning to the inside of the fish. Fish can be marinated overnight or in the refrigerator for 30-45 Minutes if you have limited time.
  3. Heat Large pan on medium to high heat and add oil. Allow pan to heat for at least 5 minutes to avoid sticking. 
  4. Add fish to pan and allow to fry on each side for 5-7 minutes or until golden brown.
  5. Remove fish and allow to drain on paper towel.
  6. Discard most of the oil and leave about 2 Tablespoon for making the brown stew sauce.

How To Make Brown Stew Sauce:

  1. In the same pan that was used to fry the fish, add 2 tablespoon of oil(Same seasoned oil used to fry the fish). I also added 1 tablespoon of coconut oil for the flavor. So this makes it about 3 Tablespoon of oil.
  2. With pan on medium heat, add Onion, Garlic, Tomato, Sweet Pepper, Scallion, Carrot, Thyme, Scotch Bonnet, Ginger, Pimento Seeds. Sautee for 3-4 minutes. 
  3. Stir and combine, Wine, Jerk Seasoning, Green Seasoning, Ketchup, Sweet Chili, Vinegar, Soy Sauce with vegetables. Allow to Sautee for another 3-4 minutes. Add more wine or water if needed. Also adjust seasoning if needed.
  4. Once Sauce meets your desire, add fish to pan. 
  5. Scoop vegetables and liquid over fish. 
  6. Cover pan and allow to simmer on low heat for another 8-10 minutes.
